Mustard
There are numerous types of mustard sauces. Each with its own unique flavor and ingredients. The main types of mustard seeds include yellow, white, brown and black and they are used individually or in combination in most mustard sauces.

White seeds are the mildest of the mustard seeds. They are pale yellow or white and have a mild or slightly tangy flavor. Often used for making yellow mustard or pickling.
Yellow mustard shares a similar flavor profile with white and is used interchangeably to make American yellow mustard.
Brown mustard seed is more pungent and has a spicier flavor compared to white and yellow. They are used to make mustard with spicier and stronger taste like Dijon mustard. It's also quite common in Indian and Asian cuisines.
Black mustard seeds are the spiciest and the most pungent among all kinds of mustard. They have a sharp taste and are used in Indian cuisine for tempering.
Here's a recipe to make the best mustard sauce.
Yellow mustard 1 cup
Vinegar 2tbsp
Salt to taste
Sugar to taste
Mayonnaise
Method :
Take 1/4th yellow mustard and roast till light to medium brown in color on low flame. Once done, soak both yellow and brown mustard in water for half an hour.
In a mixer grinder, add all of the ingredients. Grind till smooth.
Add water as required.
Store in an airtight container. It will last for up to 3 months when refrigerated.
Dilute this paste as much or as little as you would like with mayonnaise to enjoy as a spread.
Barbecue Sauce
It is believed that Africans trade brought new ingredients and flavours to the American south, contributing to the development of what we now know as barbeque sauce. Barbeque sauces evolved even more in the american colonies incorporating local ingredients like molasses, vinegar and various spices. It became a staple in American cuisine with countless regional and national brands. It diversified into various styles such as sweet, smoky, spicy, mustard based sauces.
Here's a fantastic barbecue recipe for you to try.
Ketchup 1 cup
Brown sugar ½ cup
Vinegar or apple cider vinegar ¼
Molasses 2 tbsp
Worcestershire sauce 1 tbsp
Dijon mustard 1 tbsp
1 tsp smoked paprika
½ tsp salt
½ tsp garlic powder
½ tsp onion powder
¼ tsp black pepper powder
Method :
In a pan put all the ingredients.
Let it come to a boil over medium heat.
Allow it to simmer till it comes to the desired consistency.
Taste and adjust the seasoning.
Allow to cool down and transfer to an airtight jar.
Store refrigerated for up to a week.
Note : You can customize your sauce by adding honey or sugar for sweetness, more cayenne pepper if you like it spicy or liquid smoke to impart a smoky flavor. if you don't have liquid smoke, use burnt charcoal following "dhungaar" technique.
Chipotle
You might find it intriguing that chipotle peppers are in fact smoke dried red jalapeno peppers. The word chipotle itself means smoked chilli in nahuatl. Chipotle peppers have been used in Mexican cooking for a long period and over the years they found their way into various sauces and condiments.

4-5 chipotle peppers
Mayonnaise 1 cup
Garlic 3-4 cloves
Lime juice 1 tbsp
Salt and pepper
Ketchup 1 tbsp
Method :
Soak chillies in water till they turn soft.
In a blender, add chillies (NO WATER) and rest of the ingredients.
Blend till smooth. Add chilli water to adjust the consistency if required.
